Our Ashbys® teas are packaged in 2lb bulk bags and start with the finest blend of pure green tea from China. All tea leaves come from the same plant, the Camellia Sinensis, but what makes the difference is how they are processed. To produce a green tea, harvested leaves from Camellia Sinensis which immediately undergo a process of firing or steaming. This action stops enzymatic activity that leads to oxidation (darkening) of the leaves. The moisture in the steaming process produces a more assertive green, bright and crisp character, while firing with dry heat generally produces a smooth, toasty, vegetal, and sometimes smoky profile.
Though caffeine naturally occurs in tea leaves, there are several methods for removing all but 1–2% of it. The cleanest method, using carbon dioxide, is our preferred approach for preserving the inherent character of the tea: CO2 is brought to a super-critical concentration, which then acts as a solvent to specifically isolate caffeine molecules from the leaf.
